Every year a handful of new restaurants and dining spots pop up across Providenciales combining the Grace Bay ‘wow factor’ with the finest ingredients and culinary talent on the islands.

Island House LVM guests always have the best of both worlds with private chefs on call for in villa dining, but when on island, it’s always fun to eat out and about, sampling the best seasonal ingredients and menus Provo has to offer.
Blue Water Bistro at Wymara Resorts ticks each and every box with its Five Star rating on Trip Advisor. Expect a relaxed, gourmet experience married with great produce and exceptional seafood - a firm favourite with locals and guests on the calm stretch of Grace Bay West off Lower Bight Road.
The Wymara Resort also offers another premium dining option, Indigo, whilst Sunset Cove’s latest culinary destination Land + Sea can be found on the quieter southcoast of the island.
The food is ever only half the story with the presentation, ambience and décor a key factor. Blue Water Bistro scores highly in this area, as arrival takes you from the slick sophistication of the main resort and adjacent Pink Bar to the beautiful beachside restaurant itself.
Warmly greeted by the friendly team you are immediately put at ease. Intimate groupings of tables and comfortable banquettes at the water’s edge are dressed with twinkling lanterns whilst the soundtrack is the whisper of the waves beyond.
Expect a selection of local specialities and rums, along with premium spirits, fresh fruits juices and bitters. We particularly loved the signature Conch Cave Colada, a punchy blend of local Bambarra rum, mango, coconut cream, pineapple juice and lime served in fresh whole coconut. Fresh juices and smoothies are also on offer along with wines and sodas.

Unsurprisingly, witha rich abundance of lobster found in island waters from August to March, this naturally features heavily on restaurant menus to maximise the delicious and sustainable catch.
Blue Water is no exception and when we visited, dishes such as Chef Andrew’s grilled lobster tail, lobster burger and handmade fettuccine with local Turks lobster in a creamy garlic white wine, basil and lemon sauce could all be found on the menu.
Appetisers are a particular highlight with Flash fried jumbo coconut tiger prawn cutlets with Chilli ancho sauce and fresh lime mayonnaise a hit when we dined, whilst the zesty orange and hazelnut dressing accompanying the Roasted vegetable salad was one of the standout flavours of the evening.

US Tenderloin steaks, slow cooked smoked brisket and Caribbean style butter chicken also feature alongside delicious salads, salmon and fresh tuna. Sides include spicy fried new potatoes in batter, red bean rice with gravy and sweet potato fries with chipotle mayo.
One dish we wish we’d had room for was the Signature Caribbean seafood claypot overflowing with lobster, mahi-mahi, tiger prawns, bay scallops, conch, mussels, new Bedford scallops, and grouper, dressed in a Jamaican style coconut curry. Until next time!
